Chilaquiles are a classic Mexican breakfast dish that can be pretty aptly described as a fried tortilla casserole. Crisp chips are soaked in salsa (in this case a bright and world noodle dishes|https://noodleinsight.com/ tangy salsa verde made from tomatillos) until just barely softened but still mildly crunchy. This recipe combines black beans with charred corn, along with a few slices of avocado and a handful of toasted pumpkin seeds for a meal that's not only balanced in carbs, protein, and high in good green vegetables, but is crazy delicious to boot.

Speaking of that clinginess, I ran into my first issue with the vegan version of the dish. Traditionally, the sauce base gets mixed with some rich chicken stock, which adds some natural gelatin and body to the mix. Plain old water or vegetable stock is lacking in that body, making the sauce a little too thin. It runs off the noodles instead of sticking to them. The tahini helps a bit, but my base needed a little extra help.

Making excellent tomato soup from scratch at home is almost as easy as opening a can, and the return on your minor time investment is significant. This version is sort of like a hot gazpacho, in that it's emulsified with bread and olive oil.

If you only ever eat cucumbers raw or pickled, you aren't using the vegetable to its full potential. Salting and lightly cooking cucumbers tenderizes them, turning their crunch into a meaty bite. One of our favorite ways to cook cucumbers is in this easy stir-fry, seasoned with marinated ground pork, soy sauce, and sesame oil.

Perhaps the biggest key to making excellent dan dan noodles is to make your own roasted chile oil. When done right, it gets a rich, fruity, smoky flavor that none of the store-bought stuff can touch. It's really quite simple. Toasted Sichuan peppercorns have a sweet, citrus-like aroma with a mouth-numbing quality, while roasted chile oil brings on the heat.

It's not as popular with the U.S. audience as it is with the British (yet), but it seems that as palates are shifting and folks are becoming more and more accustomed to spicier foods, jalfrezi is getting primed to win over this side of the pond as well. With its origins in China, jalfrezi is more similar in its cooking method to dry-fried Chinese dishes rather than the typical wet Indian curry. This one incorporates chickpeas, potatoes and spinach, and a simple chutney of cilantro, garlic, chile, and lime juice finishes it off.

If you were so inclined, you could do as the street vendors of Chengdu did: make the aromatics and sauce base in larger batches, store them together in a sealed container in the fridge, and have them ready to go at moment's notice whenever you want a quick snack. All you have to do is cook the noodles, add some starchy cooking liquid to the sauce base, pour it on top, and you're good to go. Due to its high oil, salt, and acid content, the pre-made and mixed sauce should stay good in a sealed container in the fridge for several weeks at least.

The heat of a wok is the perfect vessel for turning cucumbers and mushrooms into a tender, juicy side dish free from mush. A blast from a kitchen blowtorch imparts an extra layer of smoky wok hei flavor on the cucumbers, which then get mixed with meaty king trumpet mushrooms and funky fermented bean curd. The result is a simple vegetarian stir-fry that doesn’t skimp on flavor.

There are some cravings that only that iconic white box of Chinese-American takeout will satisfy. We're no strangers to the stuff—many's the night we've spent in front of the TV, inhaling a truly shocking amount of beef with broccoli and fried rice. But, as much as we love the ease and convenience of calling in our favorite dishes from the neighborhood spot—ideally while riding the train on the way home, so the food is five minutes away once we walk in the door—homemade versions of takeout standbys are not only possible but often tastier than the originals they copy.

Fried rice isn't just for using up day-old rice; it's also great for repurposing other leftovers in your fridge. We came up with this recipe with pork tenderloin in mind, but basically any meat you find yourself with would be appropriate. You can also sub out the sweet corn and shishito peppers for whatever you have on hand that sounds tasty.

Chow mein is another Chinese-American standard that's so easy to make at home and customize to your liking, you may never feel the need to order it again. For this DIY version, we quickly cook vegetables (chives, julienned carrots and scallions, bean sprouts) and tofu in a wok, then combine them with long, slender chow mein noodles and a soy-based sauce. Add extra vegetables, more tofu, or meat to turn it into a heartier meal.

This take on fried rice looks to the sea for inspiration—we make the dish with fresh crab (if you can get it; use canned if you can't) and season it with fish sauce. We tend to prefer jasmine, medium-grain white, or sushi rice for this and all our fried rice recipes. Long-grain rice works, but it doesn't get the same chewy-tender texture as shorter varieties.Tag Ideas for Your Next Phys Ed Class (Ep. 126 - Tag Games)
