Chilaquiles are a classic Mexican breakfast dish that can be pretty aptly described as a fried tortilla casserole. Crisp chips are soaked in salsa (in this case a bright and tangy salsa verde made from tomatillos) until just barely softened but still mildly crunchy. This recipe combines black beans with charred corn, along with a few slices of avocado and a handful of toasted pumpkin seeds for a meal that's not only balanced in carbs, protein, and high in good green vegetables, but is crazy delicious to boot.

There are some cravings that only that iconic white box of Chinese-American takeout will satisfy. We're no strangers to the stuff—many's the night we've spent in front of the TV, inhaling a truly shocking amount of beef with broccoli and fried rice. But, as much as we love the ease and convenience of calling in our favorite dishes from the neighborhood spot—ideally while riding the train on the way home, so the food is five minutes away once we walk in the door—homemade versions of takeout standbys are not only possible but often tastier than the originals they copy.

Return pot of water to a hard boil and add noodles. Done right, takeout fried rice is a thing of satisfying, well-balanced beauty. But it's frequently served clumpy and over-sauced, or, worse, bland and oily. Making it at home gives you more control over the final dish, plus it's a great way to use up leftovers. Our approach busts a few myths—no, your rice doesn't have to be medium-grain, or day-old, for that matter. While this version calls for vegetables, like carrots and peas, you can easily bulk it up with pork , kimchi and Spam , Thai-style crab , chicken, or your protein and garnishes of choice.

While mushrooms are cooking, combine soy sauce, vinegar, tahini, sugar, chili oil (with its sediment), and broad bean chili paste in a medium bowl. Set aside. Bring 1 quart of salted water to a simmer in a medium pot and keep hot.

It's not easy making a vegan burger that doesn't come out mushy or bland or just plain boring. This one combines chickpeas, cashews, and barley along with fresh vegetables to form a complex, satisfying patty that will behave just like meat on the griddle or grill.

I use my patent-pending, copyrighted Minced Mushroom Mix (A.K.A. M 3 ) to replace the ground meat in this vegan mapo tofu, giving it a chewy texture and a rich flavor all its own. I like it even better than the original.

If you've never tried a marinated kale salad, it might just rock your world. Here's how it works. Take your raw kale, dress it with a standard vinaigrette, let it sit overnight in the fridge, and boom—what was once a tough, leafy green is now tender and crisp. The greatest part about it is that after marinating, the salad will last for days and days without losing its crispness. This salad also calls for chickpeas and onions, making it a hearty side or light lunch.

Heat reserved 1 tablespoon of mushroom oil in a large skillet or wok over high heat until shimmering. Add chopped Sichuan vegetables, fried mushrooms, and garlic. Cook, stirring and tossing constantly until fragrant, about 45 seconds. Add Shaoxing wine and stir to combine. Transfer mixture to bowl with sauce.

Here's another recipe in my quest to take the cute and cuddly animals out of all of my favorite foods in a no-BS, as-delicious-as-the-real-thing, good-enough-for-anyone kind of way. I'm particularly happy with this one, which makes sense, as it's a logical extension of my vegan mapo tofu recipe. I'm talking about the other great pillar of cheap-and-easy Sichuan cuisine: dan dan noodles.

The remaining aromatics are simple. A few tablespoons of chopped preserved Sichuan mustard root, some garlic, and a splash of Shaoxing wine to deglaze the skillet once it's all been stir-fried together.
